  1. Quit Dark Souls to the main menu.
  2. Choose DRAKS0005.sl2 in Documents › NBGI › DARK SOULS REMASTERED › the numbered folder.

On Steam Deck or Linux, Documents is in your Steam library: steamapps › compatdata › 570940 › pfx › drive_c › users › steamuser.
